A bird expert friend of mine, just identified this as a "limpkin". It looked like he was eating some sort of mussels he was finding, but apparently they like "apple snails", so perhaps that's what I was observing.

Just used iPhone for the boat pic, used the Nikon for the bird picture. No post processing for either.
